Spicy Zucchini & Tomato Hot Salad

I've been in the kitchen again, well technically I spend half my life in the kitchen preparing food for my little family and today was just another one of them days, but I thought I'd make something new for dinner.

This is a quick meal to prepare and has a lovely zing to leave your taste buds tingling.

You will need:

1 Zuccchini
1 Chili pepper
4 Spring onions
1 Onion
3 cloves of garlic
1/2 tin of tomatoes (less if like me you have children that can't stand them)
1 tsp black pepper
1/4 tsp salt
olive oil


1.Peel and chop the onions, garlic and chilli and place in a bowl.

2.Grate the Zucchini and add to the bowl.

3. Add the black pepper and salt and mix all the ingredients together.

4. Heat some olive oil in a pan and once heated add the mixture.

5. Mix for a couple of minutes then add the tomato and 
leave to simmer for 5 minutes.

6. I served with avocado slices and homemade bread.

I had written this post for the Betta Living Vegetarian Recipe Competition, but me being me.  I have missed the deadline by a few hours eeeeek!!
