This is a quick meal to prepare and has a lovely zing to leave your taste buds tingling.
You will need:
1 Chili pepper
4 Spring onions
3 cloves of garlic
1/2 tin of tomatoes (less if like me you have children that can't stand them)
1 tsp black pepper
1/4 tsp salt
2.Grate the Zucchini and add to the bowl.
3. Add the black pepper and salt and mix all the ingredients together.
5. Mix for a couple of minutes then add the tomato and
leave to simmer for 5 minutes.
6. I served with avocado slices and homemade bread.
